Mini BBQ Chicken Pizza is on every pizza restaurant menu, but is so simple to make in your own home. It only takes 5 ingredients!
One of the first things I think about before I go to bed for the night is what will I feed my family for breakfast the next day. And the first thing I think about when I wake up is how I can ready any ingredients for dinner later.
Lunch never crosses my mind until I’m hungry in the afternoon. If I have leftovers from the night before I’m completely happy to heat some up. Since I work from home creating recipes to share here and on my sister site, My Name Is Snickerdoodle, quick and easy is best.
On of my favorite things to purchase from Trader Joe’s is their Naan Bread. My cousins introduced it to me and I’m hooked. They have it fresh in their bakery isle, but I also like to keep the frozen kind on hand.
A few weeks ago I was craving pizza and pulled out some bottled pizza sauce, mozzarella from my fridge and used one of the naan breads as the crust. It was very tasty and hit the spot!
As I was rinsing my dish off I was thinking of other pizzas I could create using the simple naan. This BBQ pizza came to mind because it’s one of my husband’s favorites!
The next week I gathered the rest of the ingredients for this and assembled it for my husband for dinner one night. He loved it! And I loved it because it only took a few minutes to make.
What Chicken To Use On BBQ Chicken Pizza
Do you have a Costco near you? We had one built near us about 3 years ago and I’m a super fan for one reason. Their rotisserie chicken is incredibly delicious and comes in so handy when you need cooked chicken.
This recipe calls for cooked chicken and a rotisserie chicken is always my go to. You most certainly could use left over baked chicken, grilled chicken or even quickly saute some in a pan.
Using naan bread gives you the opportunity to have an easy lunch and a quick dinner! You could make a whole pizza night of it. Put out all the topping and let everyone create their own.

- 4 Naan Bread
- 1 Cup Favorite BBQ Sauce
- 2 Cups Cooked Chicken, Shredded
- 1/2 Cup Red Onion, Thinly Sliced
- 2-3 Cups Colby Jack Cheese, Shredded
- 1/4 Cup Cilantro, Finely Chopped
- Preheat oven to 375 degrees.
- On two large baking sheets spread out naan bread.
- Spoon on BBQ sauce over the top.
- Top with shredded chicken, sliced onion and then sprinkle with cheese.
- Bake for 10-15 minutes or until cheese is melted.
- Drizzle with a little more BBQ sauce and sprinkle with cilantro.
- Slice and serve hot.
This Wedge Salad would also make for a great lunch!
