Cilantro Lime Dressing

Cilantro Lime Dressing is incredibly creamy and is tasty drizzled over a Mexican salad. Made with simple ingredients like garlic, lime juice and cilantro.

Cafe Rio Dressing

There was a time when we lived in Utah. If you are from there or have spent anytime there, you are completely familiar with the establishment Cafe Rio.

It’s a popular restaurant that serves Mexican inspired food. The best item on the menu is their Creamy Cilantro Dressing. It’s fantastic drizzled over anything.

We didn’t eat there often because it was always so full of patrons. But when we did, we loaded up on that dressing.

Since living in Texas for the last decade, we’ve tried to find anything similar to Cafe Rio. Some places have come close, but I prefer to just make all my favorite menu items at home.

I’ve fine tuned the dressing recipe and now I think it’s even better than the original. Most of the ingredients you can keep on hand in your pantry or refrigerator and that’s a plus when you are making anything in the kitchen.

How To Make Cilantro Lime Dressing

  • Place mayonnaise, milk, enchilada sauce, garlic, lime juice, ranch dressing mix and fresh cilantro into a blender or food processor and pulse until completely blended. About 60 seconds.  
  • Store in an airtight container and chill in the refrigerator.  
  • Dressing keeps for up to 7 days.

Ingredients

  • 1 Cup Mayonnaise
  • 1/4 Cup Milk
  • 1 Cup Green Enchilada Sauce Mild
  • 2 Garlic Cloves
  • 2 TBSP Lime Juice Freshly Sqeezed
  • 1 Pkt Hidden Valley Ranch Dry Mix
  • 1/2 Cup Cilantro Fresh

Instructions
