Tomato Basil Soup
A Creamy Tomato Basil Soup that is full of fresh herbs and is the best friend to the perfect grilled cheese!

- 2 TBSP Extra Virgin Olive Oil
- 2 TBSP Butter
- 1/2 Medium Yellow Onion, Finely Minced
- 2 Whole Garlic Cloves, Minced
- 28 oz Petite Diced Tomatoes, Drained
- 8 oz Tomato Sauce
- 3 Cups Chicken Stock
- 1 Cup Basil Leaves, Packed
- 1 Cup Heavy Cream
- 1 tsp Kosher Salt
- 1/4 tsp Freshly Cracked Pepper
- Herb Croutons, Optional
- Freshly Grated Parmesan Cheese, Optional
In a large heavy bottom pot heat oil and butter together over medium high heat.
Once butter is melted add in minced onions and stir to prevent burning. Cook for about 2-3 minutes or until onions are starting to be translucent.
Add in minced garlic. Stir and cook for 30 seconds.
Stir in diced tomatoes, tomato sauce, salt and pepper. Cook for about 1 minute.
Stir in chicken stock and bring to a boil.
Boil for 1 minute and reduce heat to medium low.
Simmer for 20 minutes.
Finely chop basil and add into soup.
Stir heavy cream into soup and cook for another 5 minutes.
Season with more salt and pepper if needed.
Serve and garnish with croutons and grated parmesan cheese.
